Book Review - Gluten Free Cookies

Gluten-Free Cookies

I love this cookbook!!! It is so easy to read. I love how she has the ingredients separated for different steps. It was so easy, that I had my 9 year old daughter use it to learn to follow instructions out of a cookbook. She did a great job. I love the recipes in the book. And I love her recipe for her flour blend. I am now using her flour blend for my all purpose gluten free blend.

Jeanne Basye is the author of Gluten Free-Cookies. She started baking gluten free cookies for her gluten free family and soon became known in her neighborhood as “The Gluten Free Cookie Lady.”

I use to think that gluten free cookies were going to be flat or hard no matter how I tried. And then the Gluten Free Cookies cookbook arrived in the mail. I was surprised about all of the tips and information about baking was in that book. I pulled out my flours and mixed up a batch of “The Gluten Free Cookie Lady Flour Blend.” Now, let the cookie baking begin. I decided to start with good old Chocolate Chip Cookies. I could compare that one from memory. I followed all of her tips about pre-heating, cold dough, and found out my oven was not the correct temperature as I selected. When the timer went off, I pulled out of the oven PUFFY COOKIES, not flat! After they cooled they were still puffy! I took a bite and they were soft. I left them set out on the counter, hidden in my mixing bowl, because I wanted to know if they would be hard the next day. Each day, I ate the test cookies and they were soft four days later exposed to air. I was impressed. They also tasted great. My husband, who is not gluten free, loved them as well.
I also made the Oatmeal Raisin Cookies and they were tasty as well. I am excited about trying more of her cookie recipes that are in the book. She has lots of recipes in her book. You will find all time favorites, bars and brownies, chocolate lover cookies, fruity and spicy cookies, nutty cookies, no bake cookies, and cookies with nuts in them. She also has a section about nuts (and recipes), flavoring and scenting sugar, fillings, and frosting and glazes. With a bonus, you also will find recipes for making waffles, granola and ice cream. And also lots of tips.

I was so impressed, that I had to test her “Gluten Free Cookie Lady Flour Blend” with muffins. Muffins have always been an area of frustration for me. This time I pulled out my first gluten free muffins that were baked completely through. No doughy centers. They were so good, the kids finished them off as quickly as they were cooling. I had to make up another batch of her flour blend so that I could make more muffins. I have decided to use the “Gluten Free Cookie Lady Flour Blend” for my all purpose flour.
